I made this recipe, centered around pork loin chops, after a very long run and an exhausting day. I wanted to create something healthy but also hearty enough to restore my energy. The meal is packed with flavor and the flavors complement themselves well.
After my last few food articles, you may have noticed a garlic, so beware: this particular meal may have the most garlic so far. I’ve come from generations of garlic lovers. This meal consists of one pork loin chop with a side of spicy black beans and garlic bok choy. I prepared this meal for myself, but the recipe may be doubled as many times as necessary to fulfill larger crowds.
Pork Loin
1/4 lb. pork loin chop
4 T olive oil
3 cloves garlic
1 t dried or fresh rosemary
1/2 t salt
1/2 t pepper
Add the olive oil to a small marinating bowl and peel and chop the garlic, add this, the rosemary, salt and pepper to the bowl. Place the pork chop into the same bowl and let sit for about 15-20 minutes, making sure that both sides are covered in garlic and oil. Place the meat into a hot pan and cook each side for about 7 minutes, or until it is cooked through.
Garlic Bok Choy
1 bok choy
3 cloves garlic
Salt and pepper to taste
2 T olive oil
Rinse the bok choy and cut in half lengthwise. Peel and crush the garlic and add the whole garlic to the hot olive oil in a pan. Add the bok choy and rotate about every minute for a total of four minutes. I serve the whole smashed garlic with the greens and eat both but you can remove the garlic if it doesn’t suit your palate.
Spicy Black Beans
1/2 can black beans
Salt and pepper to taste
1 T olive oil
3 T water
1/4 t cayenne pepper
Add the olive oil and water in a pot and heat while you drain the black beans. Add the beans to the pot and add the salt, pepper and cayenne pepper, and mix together. Cook the beans at medium heat, occasionally stirring, for about four minutes and remove. You may add more or less cayenne pepper depending how spicy you like your beans. This recipe will deliver a medium spice and great flavor with few ingredients.
