There aren’t many things I love more than my mom’s banana bread. We all have our comfort food, ranging from pizza to potatoes and chocolate cake to cookie dough. For me, my mom’s fresh-baked, healthy, and deliriously satisfying banana bread is the ultimate comfort food. Every time I take a bite I’m transported home… then I swallow and realize I need to get to the class I’m already five minutes late for. This banana bread is perfect for an on-the-go snack, a great breakfast with a cup of tea, or if you are really committed, you can just eat the entire loaf and enjoy your weekly required intake of fruit. Mom’s Banana Bread
INGREDIENTS
1 ½ cups flour
1 tsp baking soda
½ tsp salt
2 large ripened bananas (1 cup when mashed)
½ cup vanilla yogurt
1 cup sugar
2 eggs
1 tsp vanilla extract
½ cup oil
½ cup chopped walnuts (optional)
Preheat oven to 350°F. Pour flour, baking soda, and salt in a large mixing bowl. Break peeled banana into chunks and place in blender. Cover and blend until completely mashed. Add yogurt, sugar, eggs, vanilla extract, and oil. Cover and blend on high until mixed. Add nuts and blend on high until nuts are chopped. Pour blended mixture into bowl with flour. Beat with mixer at low speed. Pour finished mixture into oiled 8 ½’’ X 4 ½ ’’ X 2 ½ ’’ loaf pan. Bake for 1 hour, or until done (test with toothpick). Yields one loaf (16 sliced per loaf).
